This light and crispy Chinese chicken salad is a refreshing and flavorful dish perfect for a quick meal.

Ingredients

  • 1 pound cooked chicken breast, shredded
  • 1/2 head iceberg lettuce, shredded
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1/2 cup chopped green onions
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • 1/2 teaspoon grated fresh ginger
  • 1/4 cup chopped peanuts
  • 1/4 cup crispy wonton strips

Instructions

  1. In a large bowl, combine the shredded chicken, iceberg lettuce, red cabbage, carrots, green onions, and cilantro.
  2. In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey, minced garlic, and grated ginger to make the dressing.
  3. Pour the dressing over the salad ingredients and toss gently to combine.
  4. Divide the salad among serving plates and top with chopped peanuts and crispy wonton strips.

Notes

  • For an extra kick, add a pinch of red pepper flakes to the dressing.
