1 bunch (about 1 pound) fresh asparagus, trimmed and cut into 1-inch pieces
2 (6-ounce) cans mackerel in olive oil, drained and flaked
1/4 cup finely chopped red onion
2 tablespoons chopped fresh parsley
1 tablespoon fresh lemon juice
2 tablespoons olive oil
1/2 teaspoon Dijon mustard
Salt and freshly ground black pepper to taste
Instructions
Bring a pot of lightly salted water to a boil. Add the asparagus and cook for 2-3 minutes, or until tender-crisp. Drain and rinse with cold water to stop the cooking process.
In a large bowl, combine the cooked asparagus, flaked mackerel, red onion, and parsley.
In a small bowl, whisk together the lemon juice, olive oil, and Dijon mustard. Season with salt and pepper.
Pour the dressing over the mackerel mixture and toss gently to combine.
