This mackerel asparagus salad is a light and flavorful dish, perfect for a quick lunch or dinner. It combines tender asparagus, flaky mackerel, and a refreshing lemon vinaigrette.

  • 1 bunch (about 1 pound) fresh asparagus, trimmed and cut into 1-inch pieces
  • 2 (6-ounce) cans mackerel in olive oil, drained and flaked
  • 1/4 cup finely chopped red onion
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon Dijon mustard
  • Salt and freshly ground black pepper to taste

Instructions

  1. Bring a pot of lightly salted water to a boil. Add the asparagus and cook for 2-3 minutes, or until tender-crisp. Drain and rinse with cold water to stop the cooking process.
  2. In a large bowl, combine the cooked asparagus, flaked mackerel, red onion, and parsley.
  3. In a small bowl, whisk together the lemon juice, olive oil, and Dijon mustard. Season with salt and pepper.
  4. Pour the dressing over the mackerel mixture and toss gently to combine.
  5. Serve immediately or chill for later.
