Maple-Miso Chicken Thighs are a delicious and easy weeknight meal, featuring tender chicken thighs coated in a savory and sweet glaze. This dish balances the umami of miso with the sweetness of maple syrup, creating a flavorful experience.

  • 8 bone-in, skin-on chicken thighs (about 3 pounds)
  • 1/4 cup white miso paste
  • 1/4 cup maple syrup
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 teaspoon sesame oil
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons chopped fresh chives or green onions, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. In a medium bowl, whisk together the miso paste, maple syrup, rice vinegar, soy sauce, grated ginger, minced garlic, and sesame oil until smooth.
  3. Pat the chicken thighs dry with paper towels. Season both sides with salt and pepper.
  4. Place the chicken thighs on the prepared baking sheet. Brush about half of the miso-maple glaze over the chicken.
  5. Bake for 20 minutes.
  6. Remove the baking sheet from the oven and brush the remaining glaze over the chicken.
  7. Return to the oven and continue baking for another 20-25 minutes, or until the chicken is cooked through and the skin is caramelized. An instant-read thermometer inserted into the thickest part of the thigh should register 165°F (74°C).
  8. Garnish with fresh chives or green onions before serving.

Notes

  • For extra crispy skin, you can broil the chicken for the last 2-3 minutes, watching carefully to prevent burning.
  • This dish pairs well with steamed rice and roasted vegetables.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
