Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/2 cup vegetable broth
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 (15 ounce) can butter beans, rinsed and drained
  • 1/4 teaspoon dried oregano
  • Salt and black pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Stir in garlic and cook for 1 minute more until fragrant.
  3. Add diced tomatoes, vegetable broth, heavy cream, Parmesan cheese, butter beans, and oregano to the skillet. Stir to combine.
  4. Bring to a simmer, then reduce heat to low, cover, and cook for 10-15 minutes, or until the sauce has thickened and the flavors have melded.
  5. Season with salt and pepper to taste.
  6. Garnish with fresh basil, if desired, and serve warm.

  • For a spicier kick, add a pinch of red pepper flakes with the garlic.
