Ingredients
Scale
4 salmon fillets (about 6 ounces each)
2 tablespoons Dijon mustard
1 tablespoon olive oil
1 teaspoon dried dill
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1 pound fresh asparagus, trimmed
1 tablespoon lemon juice
1 tablespoon chopped fresh parsley
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a small bowl, mix the Dijon mustard, olive oil, dried dill, garlic powder, and black pepper.
Place the salmon fillets on the prepared baking sheet. Spread the mustard mixture evenly over the top of each salmon fillet.
Bake for 12-15 minutes, or until the salmon flakes easily with a fork and is cooked through.
While the salmon bakes, steam or blanch the asparagus until tender-crisp, about 3-5 minutes.
In a medium bowl, toss the warm asparagus with lemon juice and fresh parsley.
Serve the mustard-and-herb-crusted salmon immediately with the warm asparagus salad.
Notes
Adjust baking time based on the thickness of your salmon fillets.
You can use other herbs like thyme or oregano in the crust.
For a spicier kick, add a pinch of red pepper flakes to the mustard mixture.
