A hearty and comforting vegetable beef soup made with tender beef, fresh vegetables, and a rich broth.

Ingredients

  • 1 lb beef stew meat, cubed
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 4 cups beef broth
  • 2 cups water
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup green beans, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 bay leaf

Instructions

  1. Heat oil in a large pot over medium heat. Add beef and brown on all sides. Remove and set aside.
  2. In the same pot, add onion, carrots, and celery. Cook until softened, about 5 minutes.
  3. Add garlic and cook for 1 minute.
  4. Return beef to the pot. Add broth, water, tomatoes, green beans, salt, pepper, thyme, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for 1 hour or until beef is tender.
  6. Remove bay leaf before serving.

Notes

  • For a thicker soup, mix 1 tbsp cornstarch with 2 tbsp water and stir into the soup.
  • Store leftovers in an airtight container for up to 3 days.
  • Freeze for up to 3 months.
