1 pound (450g) large shrimp, peeled and deveined
1 large head broccoli, cut into bite-sized florets
4 cloves garlic, minced
2 tablespoons olive oil
1/2 cup (120ml) vegetable broth
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes (optional)
Salt to taste
Black pepper to taste
Fresh lemon wedges, for serving
Instructions
Heat olive oil in a large skillet or pot over medium heat.
Add minced garlic and cook for 1 minute until fragrant, being careful not to burn it.
Add shrimp to the skillet and cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from the skillet and set aside.
Add broccoli florets and vegetable broth to the same skillet. Cover and cook for 5-7 minutes, or until broccoli is tender-crisp.
Return shrimp to the skillet with the broccoli.
Stir in dried oregano, red pepper flakes (if using), salt, and black pepper.
Toss everything together to combine and heat through for 1-2 minutes.
Serve immediately with fresh lemon wedges.
