This recipe delivers a flavorful shrimp and broccoli dish cooked in a single pot for easy cleanup. Garlic infused shrimp and tender broccoli make a quick and healthy meal.

  • 1 pound (450g) large shrimp, peeled and deveined
  • 1 large head broccoli, cut into bite-sized florets
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 cup (120ml) vegetable broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt to taste
  • Black pepper to taste
  • Fresh lemon wedges, for serving

Instructions

  1. Heat olive oil in a large skillet or pot over medium heat.
  2. Add minced garlic and cook for 1 minute until fragrant, being careful not to burn it.
  3. Add shrimp to the skillet and cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from the skillet and set aside.
  4. Add broccoli florets and vegetable broth to the same skillet. Cover and cook for 5-7 minutes, or until broccoli is tender-crisp.
  5. Return shrimp to the skillet with the broccoli.
  6. Stir in dried oregano, red pepper flakes (if using), salt, and black pepper.
  7. Toss everything together to combine and heat through for 1-2 minutes.
  8. Serve immediately with fresh lemon wedges.

  • Do not overcook the shrimp; they cook quickly.
  • Adjust the amount of red pepper flakes to your spice preference.
  • This dish is excellent served with a side of rice or quinoa.
