1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
1 tablespoon cornstarch
1 tablespoon soy sauce
1 tablespoon water
1 teaspoon sesame oil
1 tablespoon vegetable oil, plus more for stir-frying
1 pound fresh string beans, trimmed
1/2 cup sliced yellow onion
2 cloves garlic, minced
1 tablespoon grated fresh ginger
1/2 cup chicken broth
1 tablespoon oyster sauce
1 teaspoon sugar
1/4 teaspoon black pepper
Instructions
In a medium bowl, combine the chicken pieces with cornstarch, soy sauce, water, and sesame oil. Mix well and set aside to marinate for at least 15 minutes.
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the string beans and stir-fry for 3-5 minutes, until tender-crisp. Remove from the skillet and set aside.
Add a little more vegetable oil to the skillet if needed. Add the marinated chicken and stir-fry until cooked through and lightly browned, about 5-7 minutes. Remove from the skillet and set aside.
Add the sliced onion to the skillet and stir-fry for 2-3 minutes until softened. Add the minced garlic and grated ginger and stir-fry for another minute until fragrant.
Return the cooked chicken and string beans to the skillet.
In a small bowl, whisk together the chicken broth, oyster sauce, sugar, and black pepper. Pour the sauce over the chicken and vegetables.
Stir everything together and cook for 2-3 minutes, until the sauce thickens slightly and coats the ingredients.
Serve hot with steamed rice.
Notes
For extra spice, add a pinch of red pepper flakes with the garlic and ginger.
You can blanch the string beans in boiling water for 2-3 minutes before stir-frying for a brighter green color and softer texture.
Adjust the amount of oyster sauce and sugar to your taste.
