- 2 cups heavy cream
- 1/4 cup sugar
- 1 teaspoon vanilla extract (alcohol-free)
- 1 packet certified gelatin
- 2 tablespoons cold water
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 2 tablespoons honey
- In a small bowl, sprinkle gelatin over cold water and let it bloom for 5 minutes.
- In a saucepan, heat cream and sugar over low heat until sugar dissolves.
- Remove from heat and stir in vanilla and bloomed gelatin until fully dissolved.
- Pour mixture into ramekins and refrigerate for at least 4 hours.
- For the compote, cook berries and honey in a small pan over medium heat until softened.
- Let compote cool slightly before spooning over set panna cotta.
Notes
- Chill panna cotta well for best texture.
- Adjust berry sweetness to taste.
