Pesto eggs are a quick and flavorful breakfast or brunch option. Eggs are cooked directly in a bed of pesto, infusing them with aromatic basil, garlic, and cheese. This dish is simple to prepare and offers a delicious twist on traditional fried eggs.

  • 2 large eggs
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Heat a non-stick pan over medium heat.
  2. Add the pesto to the pan, spreading it evenly to create a bed for the eggs.
  3. Once the pesto is warm and fragrant (about 30 seconds), carefully crack the two eggs directly onto the pesto.
  4. Season the eggs with salt and pepper.
  5. Cook for 3-5 minutes, or until the egg whites are set and the yolks are cooked to your desired consistency.
  6. Serve immediately, optionally with crusty bread for dipping.

Notes

  • Adjust the amount of pesto to your preference.
  • For a runnier yolk, cook for less time. For a firmer yolk, cook for longer.
