  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1 pint cherry or grape tomatoes
  • 4 ounces feta cheese, crumbled or cubed
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh parsley or basil, for garnish (optional)
  • Crusty bread or pita bread, for serving (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a medium baking dish, combine the rinsed and drained chickpeas, cherry tomatoes, olive oil, dried oregano, garlic powder, red pepper flakes (if using), salt, and black pepper. Stir to coat everything evenly.
  3. Nestle the feta cheese among the chickpea and tomato mixture in the baking dish.
  4. Bake for 20-25 minutes, or until the tomatoes have burst and softened, and the feta is warm and slightly melted.
  5. Remove from the oven and gently stir to combine the melted feta with the tomatoes and chickpeas.
  6. Garnish with fresh parsley or basil, if desired.
  7. Serve warm with crusty bread or pita bread for dipping, if you like.
