A refreshing and healthy salad featuring crisp radishes, creamy avocado, and tender asparagus.

Ingredients

  • 1 bunch asparagus, trimmed and cut into 1-inch pieces
  • 1 cup radishes, thinly sliced
  • 1 ripe avocado, diced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Blanch the asparagus in boiling water for 2-3 minutes until tender-crisp. Drain and immediately plunge into ice water to stop cooking. Drain again.
  2. In a medium bowl, combine the blanched asparagus, sliced radishes, and diced avocado.
  3. Drizzle with olive oil and lemon juice.
  4. Season with salt and black pepper to taste.
  5. Gently toss to combine and serve immediately.

  • For extra flavor, add a sprinkle of fresh herbs like dill or parsley.
  • This salad is best served fresh.
