  • 4 boneless, skinless chicken breasts
  • 1 tablespoon ranch seasoning mix
  • 1 tablespoon olive oil
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh chives, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 clove garlic, minced
  • 2 tablespoons lemon juice
  • 3 tablespoons extra virgin olive oil
  • Salt and black pepper to taste

Instructions

  1. Pat the chicken breasts dry with paper towels. Sprinkle ranch seasoning mix evenly over both sides of the chicken.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts and cook for 5-7 minutes per side, or until cooked through and golden brown. Remove chicken from the skillet and set aside to rest.
  3. While the chicken is cooking, prepare the herb sauce. In a small bowl, combine chopped parsley, chives, dill, minced garlic, and lemon juice.
  4. Gradually whisk in 3 tablespoons of extra virgin olive oil until well combined. Season the herb sauce with salt and black pepper to taste.
  5. Slice the cooked chicken breasts and arrange them on plates. Drizzle generously with the fresh herb sauce. Serve immediately.

  • For extra flavor, marinate the chicken in ranch seasoning and a little olive oil for 30 minutes before cooking.
