A quick and nutritious frittata packed with spinach and feta cheese, perfect for breakfast or brunch.

  • 6 large eggs
  • 1 cup fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup diced onion
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk the eggs with salt and pepper.
  3. Heat olive oil in an oven-safe skillet over medium heat.
  4. Sauté the onion until soft, then add spinach and cook until wilted.
  5. Pour the egg mixture over the vegetables and sprinkle feta on top.
  6. Cook for 3-4 minutes until edges set, then transfer to the oven.
  7. Bake for 12-15 minutes until fully set.
  8. Remove, slice, and serve warm.
