A vibrant and flavorful salad featuring perfectly seared shrimp and sautéed ramps, offering a delightful combination of textures and tastes.

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil, divided
  • 1 bunch ramps (about 12-15), cleaned and trimmed
  • 4 cups mixed greens
  • 1/4 cup lemon juice
  • 2 tablespoons chopped fresh dill
  • Salt and black pepper to taste

Instructions

  1. Pat the shrimp dry with paper towels. Season with salt and pepper.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  3. Add the shrimp to the skillet and sear for 2-3 minutes per side, or until pink and cooked through. Remove shrimp from skillet and set aside.
  4. Add the remaining 1 tablespoon of olive oil to the same skillet. Add the cleaned ramps and sauté for 3-5 minutes, or until tender-crisp.
  5. In a large bowl, combine the mixed greens, seared shrimp, and sautéed ramps.
  6. Drizzle with lemon juice and sprinkle with fresh dill. Toss gently to combine.
  7. Season with additional salt and pepper if needed. Serve immediately.

Notes

  • For extra flavor, marinate the shrimp in lemon juice and a pinch of red pepper flakes for 15 minutes before searing.
  • If ramps are not available, substitute with green onions or leeks.
  • This salad is best served fresh.
