  • 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 pound asparagus, trimmed and cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, minced garlic, dried oregano, salt, and black pepper.
  3. In a large bowl, combine the chicken pieces and asparagus. Pour the balsamic mixture over the chicken and asparagus, tossing to ensure everything is evenly coated.
  4. Spread the chicken and asparagus in a single layer on the prepared baking sheet.
  5. Roast for 20-25 minutes, or until the chicken is cooked through and the asparagus is tender-crisp.
