Ingredients
Scale
1.5 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
1 pound asparagus, trimmed and cut into 1-inch pieces
2 tablespoons olive oil
3 tablespoons balsamic vinegar
1 tablespoon honey
2 cloves garlic, minced
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/8 teaspoon black pepper
Instructions
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
In a small bowl, whisk together the olive oil, balsamic vinegar, honey, minced garlic, dried oregano, salt, and black pepper.
In a large bowl, combine the chicken pieces and asparagus. Pour the balsamic mixture over the chicken and asparagus, tossing to ensure everything is evenly coated.
Spread the chicken and asparagus in a single layer on the prepared baking sheet.
Roast for 20-25 minutes, or until the chicken is cooked through and the asparagus is tender-crisp.
Serve immediately.
Notes
You can add other vegetables like cherry tomatoes or bell peppers to the sheet pan.
For a spicier kick, add a pinch of red pepper flakes to the balsamic mixture.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
