Shrimp Chow Mein is a classic Chinese-American dish featuring tender shrimp, stir-fried noodles, and crisp vegetables in a savory sauce. It is a quick and satisfying meal perfect for a weeknight dinner or a casual gathering.

  • 1 pound fresh shrimp, peeled and deveined
  • 8 ounces egg noodles or chow mein noodles
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil
  • 1 cup chopped cabbage
  • 1/2 cup sliced carrots
  • 1/2 cup sliced celery
  • 1/2 cup sliced bell peppers (any color)
  • 1/4 cup sliced green onions
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/4 cup chicken or vegetable broth
  • 1 tablespoon oyster sauce (optional)
  • Salt and pepper to taste

Instructions

  1. Cook noodles according to package directions. Drain and set aside.
  2. In a medium bowl, toss shrimp with 1 tablespoon soy sauce, sesame oil, and cornstarch. Marinate for 10-15 minutes.
  3. Heat vegetable oil in a large wok or skillet over medium-high heat. Add shrimp and stir-fry until pink and cooked through, about 2-3 minutes. Remove shrimp from the wok and set aside.
  4. Add cabbage, carrots, celery, and bell peppers to the wok. Stir-fry for 3-5 minutes until vegetables are crisp-tender.
  5. Add green onions, garlic, and ginger to the wok. Stir-fry for 1 minute until fragrant.
  6. Return shrimp to the wok. Add cooked noodles, remaining soy sauce, broth, and oyster sauce (if using). Toss everything together until well combined and heated through.
  7. Season with salt and pepper to taste. Serve hot.

Notes

  • Adjust vegetables based on your preference. Broccoli, snow peas, or mushrooms are good additions.
  • For extra flavor, add a pinch of red pepper flakes for a little heat.
  • To make it vegetarian, omit shrimp and add tofu or extra vegetables.
