Shrimp in Lobster Sauce is a classic American Chinese dish. It features succulent shrimp coated in a rich, savory sauce, often with a hint of fermented black beans and garlic. This recipe uses readily available ingredients and offers a delicious and satisfying meal.

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon cornstarch
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/4 cup chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon sugar
  • 1/4 teaspoon sesame oil
  • 1 tablespoon fermented black beans, rinsed and mashed
  • 1 large egg, beaten
  • 2 green onions, sliced, for garnish

Instructions

  1. In a medium bowl, toss the shrimp with 1 tablespoon cornstarch, salt, and white pepper. Set aside for 15 minutes.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the garlic and ginger and stir-fry for 30 seconds until fragrant.
  3. Add the shrimp to the skillet and stir-fry for 2-3 minutes, until pink and opaque. Remove the shrimp from the skillet and set aside.
  4. In a small bowl, whisk together the chicken broth, soy sauce, rice vinegar, sugar, and sesame oil.
  5. Add the fermented black beans to the skillet and stir-fry for 30 seconds.
  6. Pour the broth mixture into the skillet and bring to a simmer.
  7. Slowly drizzle in the beaten egg, stirring constantly to create ribbons of egg in the sauce.
  8. Return the cooked shrimp to the skillet and toss to coat with the sauce.
  9. Cook for 1-2 minutes, until the sauce thickens slightly and the shrimp are heated through.
  10. Garnish with sliced green onions and serve immediately with steamed rice.

Notes

  • For a spicier kick, add a pinch of red pepper flakes with the garlic and ginger.
  • You can adjust the thickness of the sauce by adding more or less cornstarch mixed with a tablespoon of water.
  • If you don’t have fermented black beans, you can omit them, but the flavor will be slightly different.
