This recipe features shrimp, pesto, and asparagus for a flavorful pasta dish. It is quick to prepare and perfect for a weeknight meal.

  • 12 ounces linguine or your favorite pasta
  • 1 tablespoon olive oil
  • 1 pound large shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 1-inch pieces
  • 1/2 cup prepared basil pesto
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • Salt and freshly ground black pepper to taste
  • Lemon wedges for serving (optional)

Instructions

  1. Cook pasta according to package directions. Reserve 1/2 cup pasta water before draining.
  2. While pasta cooks, heat olive oil in a large skillet over medium-high heat.
  3. Add shrimp to the skillet and cook for 2-3 minutes per side, until pink and opaque. Remove shrimp from skillet and set aside.
  4. Add asparagus to the same skillet and cook for 3-5 minutes, until tender-crisp.
  5. Return shrimp to the skillet. Add cooked and drained pasta, pesto, and 1/4 cup reserved pasta water. Toss to combine.
  6. Stir in Parmesan cheese. If the sauce is too thick, add more reserved pasta water, one tablespoon at a time, until desired consistency is reached.
  7. Season with salt and pepper to taste.
  8. Serve immediately, garnished with additional Parmesan cheese and lemon wedges, if desired.

Notes

  • For a spicier kick, add a pinch of red pepper flakes with the pesto.
  • You can use homemade pesto or store-bought for convenience.
  • Other vegetables like cherry tomatoes or spinach can be added.
