Shrimp sushi bake cups are a delightful and easy-to-make appetizer that combines the flavors of sushi in a convenient, bite-sized form. These cups are perfect for parties or a fun weeknight meal.

Ingredients

  • 1 cup sushi rice, cooked and seasoned
  • 1/2 lb shrimp, cooked and chopped
  • 1/4 cup mayonnaise
  • 1 tbsp sriracha (optional)
  • 1 tbsp soy sauce
  • 1/2 sheet nori, cut into small strips
  • Sesame seeds for garnish
  • Green onions, sliced, for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, combine cooked sushi rice with a splash of soy sauce and mix well.
  3. In another bowl, mix chopped cooked shrimp with mayonnaise, sriracha (if using), and soy sauce.
  4. Press about 1-2 tablespoons of seasoned rice into the bottom of each mini muffin cup or a regular muffin cup.
  5. Spoon a tablespoon of the shrimp mixture over the rice in each cup.
  6. Bake for 10-12 minutes, or until the shrimp mixture is warm and slightly golden.
  7. Remove from oven and let cool slightly.
  8. Garnish with nori strips, sesame seeds, and sliced green onions before serving.

Notes

  • For extra flavor, you can add a pinch of furikake to the rice.
  • Adjust the amount of sriracha to your spice preference.
  • These cups can be prepared ahead of time and baked just before serving.
