2 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
1/2 cup soy sauce
1/2 cup water
1/2 cup brown sugar
1/4 cup cornstarch
2 tablespoons rice vinegar
1 tablespoon grated fresh ginger
2 cloves garlic, minced
1/2 teaspoon red pepper flakes (optional)
2 tablespoons sesame oil
Green onions, sliced, for garnish
Sesame seeds for garnish
Instructions
In a small bowl, whisk together the soy sauce, water, brown sugar, cornstarch, rice vinegar, ginger, garlic, and red pepper flakes (if using).
Place the chicken pieces in the slow cooker.
Pour the sauce mixture over the chicken, stirring to coat evenly.
Cover and cook on low for 3-4 hours or on high for 2-3 hours, or until the chicken is cooked through and tender.
Stir in the sesame oil.
Serve hot over rice or noodles, garnished with green onions and sesame seeds.
Notes
For a thicker sauce, you can remove the chicken and simmer the sauce on the stovetop for a few minutes until it thickens.
Adjust the red pepper flakes to your preferred spice level.
