1 pound boneless, skinless chicken breast or thighs, cut into 1-inch pieces
1 pound fresh asparagus, trimmed and cut into 2-inch pieces
2 tablespoons soy sauce
1 tablespoon cornstarch
1 tablespoon rice vinegar
1 tablespoon sesame oil
1 teaspoon grated fresh ginger
2 cloves garlic, minced
2 tablespoons vegetable oil
1/4 cup chicken broth
Cooked rice for serving
Instructions
In a medium bowl, combine chicken pieces with 1 tablespoon soy sauce and cornstarch. Toss to coat and set aside for 10 minutes.
In a small bowl, whisk together remaining 1 tablespoon soy sauce, rice vinegar, sesame oil, ginger, and minced garlic. Set aside.
Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken and stir-fry until cooked through and lightly browned, about 3-5 minutes. Remove chicken from skillet and set aside.
Add asparagus to the same skillet and stir-fry for 3-4 minutes, until tender-crisp.
Return chicken to the skillet. Pour in the sauce mixture and chicken broth. Cook, stirring constantly, until the sauce thickens and coats the chicken and asparagus, about 1-2 minutes.
Serve immediately over cooked rice.
Notes
For extra flavor, sprinkle with toasted sesame seeds before serving.
You can add other vegetables like bell peppers or snap peas to this stir-fry.
Adjust the amount of ginger and garlic to your preference.
