  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 cups mixed greens
  • 1 cup sliced fresh strawberries
  • 1/4 cup crumbled goat cheese
  • 1/4 cup chopped pecans
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil (for dressing)
  • 1 teaspoon honey
  • 1/2 teaspoon Dijon mustard

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Cook chicken for 5-7 minutes per side, or until cooked through. Let rest, then slice.
  3. In a large bowl, combine mixed greens, sliced strawberries, goat cheese, and pecans.
  4. In a small bowl, whisk together balsamic vinegar, 1 tablespoon olive oil, honey, and Dijon mustard.
  5. Add sliced chicken to the salad. Drizzle with dressing and toss gently to combine.
  6. Serve immediately.

  • For a vegetarian option, omit the chicken and add grilled halloumi cheese or chickpeas.
  • You can prepare the chicken ahead of time and store it in the refrigerator.
