10 ounces fresh spinach, rinsed and dried
1 pound fresh strawberries, hulled and sliced
1 ripe avocado, diced
1/2 cup walnuts, chopped
1/4 cup red onion, thinly sliced (optional)
2 tablespoons balsamic vinegar
1 tablespoon olive oil
1 teaspoon Dijon mustard
1 teaspoon honey or maple syrup
Salt and black pepper to taste
Instructions
In a large bowl, combine the spinach, sliced strawberries, diced avocado, chopped walnuts, and sliced red onion (if using).
In a small bowl, whisk together the balsamic vinegar, olive oil, Dijon mustard, and honey or maple syrup. Season with salt and black pepper to taste.
Pour the dressing over the salad ingredients.
