  • 1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1/2 cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1/4 cup chopped green onions, for garnish
  • 1 tablespoon sesame seeds, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add chicken pieces and cook until browned and cooked through, about 5-7 minutes.
  2. In a small bowl, whisk together sweet chili sauce, soy sauce, rice vinegar, ginger, and minced garlic.
  3. Pour the sauce over the cooked chicken in the skillet. Stir to coat the chicken evenly.
  4. Bring the sauce to a simmer and cook for 2-3 minutes, or until the sauce thickens slightly and coats the chicken well.
  5. Remove from heat. Garnish with chopped green onions and sesame seeds before serving.
