A classic sweet potato casserole topped with gooey marshmallows, perfect for holidays or family gatherings.

Ingredients

  • 3 cups mashed sweet potatoes
  • 1/2 cup granulated sugar
  • 2 eggs, beaten
  • 1/2 cup milk
  • 1/4 cup melted butter
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 2 cups mini marshmallows

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix mashed sweet potatoes, sugar, eggs, milk, melted butter, vanilla, and salt in a bowl.
  3. Spread the mixture into a greased baking dish.
  4. Bake for 25 minutes.
  5. Remove from oven and top with marshmallows.
  6. Return to oven for 5-10 minutes until marshmallows are golden.
  7. Let cool slightly before serving.

Notes

  • Use freshly mashed sweet potatoes for best texture.
  • Adjust sugar to taste if sweet potatoes are very sweet.
  • Watch marshmallows closely to avoid burning.
