1 pound fresh green beans, trimmed
2 tablespoons olive oil
2 cloves garlic, minced
1 lemon, zested and juiced
1/2 teaspoon dried thyme
Salt to taste
Black pepper to taste
Instructions
Preheat oven to 400°F (200°C).
Toss green beans with 1 tablespoon olive oil, minced garlic, lemon zest, and dried thyme on a baking sheet. Season with salt and pepper.
Roast green beans for 10-12 minutes, or until tender-crisp.
While green beans are roasting, pat tilapia fillets dry with paper towels.
Season tilapia with salt and pepper.
Heat remaining 1 tablespoon olive oil in a large oven-safe skillet over medium-high heat.
Sear tilapia fillets for 2-3 minutes per side, until golden brown.
Transfer the skillet to the preheated oven and bake for 5-7 minutes, or until tilapia is cooked through and flakes easily with a fork.
Remove green beans and tilapia from the oven. Drizzle tilapia with fresh lemon juice before serving.
Serve tilapia with roasted lemony green beans.
Notes
You can use other white fish like cod or snapper.
Adjust the amount of garlic and lemon to your preference.
For a spicier kick, add a pinch of red pepper flakes to the green beans.
