  • 1 pound fresh green beans, trimmed
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1/2 teaspoon dried thyme
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss green beans with 1 tablespoon olive oil, minced garlic, lemon zest, and dried thyme on a baking sheet. Season with salt and pepper.
  3. Roast green beans for 10-12 minutes, or until tender-crisp.
  4. While green beans are roasting, pat tilapia fillets dry with paper towels.
  5. Season tilapia with salt and pepper.
  6. Heat remaining 1 tablespoon olive oil in a large oven-safe skillet over medium-high heat.
  7. Sear tilapia fillets for 2-3 minutes per side, until golden brown.
  8. Transfer the skillet to the preheated oven and bake for 5-7 minutes, or until tilapia is cooked through and flakes easily with a fork.
  9. Remove green beans and tilapia from the oven. Drizzle tilapia with fresh lemon juice before serving.
  10. Serve tilapia with roasted lemony green beans.

Notes

  • You can use other white fish like cod or snapper.
  • Adjust the amount of garlic and lemon to your preference.
  • For a spicier kick, add a pinch of red pepper flakes to the green beans.
