This Upside Down Sheet-Pan Asparagus Tart is an easy and elegant dish, perfect for a light meal or appetizer. It features tender asparagus spears baked on a flaky puff pastry crust with savory cheese.

  • 1 sheet (14.1 ounces) frozen puff pastry, thawed
  • 1 pound asparagus, trimmed
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded Gruyere cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg, beaten

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. On the parchment-lined baking sheet, arrange the asparagus spears in a single layer. Drizzle with olive oil, salt, and pepper. Toss gently to coat.
  3. Sprinkle the Gruyere cheese evenly over the asparagus.
  4. Unfold the puff pastry sheet and place it directly over the asparagus and cheese, pressing down gently to cover.
  5. Brush the top of the puff pastry with the beaten egg.
  6. Bake for 20-25 minutes, or until the puff pastry is golden brown and puffed.
  7. Carefully remove the baking sheet from the oven. Place a large serving platter or cutting board over the tart and, using oven mitts, carefully flip the tart over so the asparagus is on top.
  8. Sprinkle with grated Parmesan cheese before serving.

  • Ensure your puff pastry is fully thawed but still cold for the best results.
  • You can customize this tart with other vegetables like cherry tomatoes or thinly sliced bell peppers.
