1 head of cabbage, chopped
2 large carrots, sliced
1 onion, diced
2 celery stalks, chopped
4 cups vegetable broth
2 cups water
1 can (14 oz) diced tomatoes
2 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1 tsp dried thyme
Instructions
Heat a large pot over medium heat.
Add onion, carrots, and celery. Sauté for 5 minutes.
Add garlic and cook for 1 minute.
Pour in vegetable broth and water.
Add chopped cabbage, tomatoes, salt, pepper, and thyme.
Bring to a boil, then reduce heat and simmer for 30 minutes.
Serve hot.
Notes
Store leftovers in the fridge for up to 3 days.
You can add other vegetables like bell peppers or zucchini.
For extra flavor, add a splash of lemon juice before serving.
