Ingredients

  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 can diced tomatoes (14 oz)
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 cups chopped kale or spinach

Instructions

  1. Brown the turkey in a large pot over medium heat.
  2. Add onion, carrots, celery, and garlic. Cook until softened.
  3. Pour in chicken broth and diced tomatoes. Stir in thyme and oregano.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Add kale or spinach and cook for 5 more minutes.
  6. Season with salt and pepper. Serve hot.
