This chocolate icebox cake is a simple yet decadent dessert. Layers of chocolate wafers and whipped cream create a rich, no-bake treat.

Ingredients

  • 2 cups heavy cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 (9-ounce) package chocolate wafer cookies

Instructions

  1. In a large bowl, combine the heavy cream, sugar, and vanilla extract. Beat with an electric mixer on high speed until stiff peaks form.
  2. Arrange a single layer of chocolate wafers on the bottom of a serving dish.
  3. Spread about one-quarter of the whipped cream evenly over the wafers.
  4. Repeat layers of wafers and whipped cream until all ingredients are used, ending with a layer of whipped cream.
  5. Cover the dish and refrigerate for at least 4 hours, or preferably overnight, to allow the wafers to soften and the flavors to meld.
  6. Slice and serve chilled.

Notes

  • For extra flavor, you can add a tablespoon of cocoa powder to the whipped cream.
  • Garnish with chocolate shavings or fresh berries before serving.
  • This cake can be made up to 2 days in advance.
